I am making a very interesting world, but I can't tell you what it is just yet!
I need to somehow allow the player to have infinite air, how do I do this?
I don't want the player to die from simply being too wet, how can I fix this?
Is there a way I can tweak the player's speed from the .xml file?
Someone please answer these questions :)

I hope someone more knowledgeable than I will have a happier answer to you.

From my testing I found that 1 is the maximum for health, temperature and wetness.  Setting values higher than 1 did not increase the time I could be underwater.  How do I know 1 is the max?  I set my health to 0.5 and, in game, saw that the health meter was at 50%

Also, when not underwater, the air value is 1.

I didn't find any mention of speed or movement except for velocity which, since it is tied to player's location, I believe would only affect the moment the person first opened the game.

@bobsterblue default air value is 0.9(i think) but you can set it to like 100000000000000000000009000 so not infinite but for a very long time.
Changing speed is impossible. Itried. Hope it helped.

Hmm. Thanks for the answers. If anything it would just be great if you could add more air for the player. Would adjusting the temperature and making it a bit hotter help with the water thing? In my world, you will be in Water a lot.
